Simple… I love simple in Summer time and this Beetroot and Carrot salad is one of my favourites. It is refreshing and is easy to digest in Summer when our Digestive Fire, the Agni tends to leak out of our bodies. This means that we don’t seem to have the same strong appetite that, say we would have in the cool of Winter.
Try this one at home and it is great served with just about anything, or simply on its own.
Simple Summer Beetroot and Carrot Salad:
3 medium sized carrots grated
2 medium sized beetroot grated
2 tbls vinegar – I use apple cider vinegar or I love MIrin – a Japanese sake
1 tsp Sesame Oil
1 tbls each of roasted sesame seeds and pepita seeds (pumpkin)
Good pinch of Salt & ground black pepper
Optional: healthy pinch of cayenne pepper for a little spice
Fresh coriander to garnish
Mix beetroot, carrot, vinegar, sesame oil, S&P together in a bowl and let it set for 10-15 mins before serving. This allows the vinegar to break down the proteins and it will digest much easier than if it were ‘raw’. Just before serving mix in seeds and garnish with some fresh coriander. Enjoy!
